Creamy Slow Cooker Chicken Soup

1. Cut up chicken and toss with salt and pepper. Sear on stove with olive oil.
2. Add chicken, veggies (onion, carrots), potatoes, broth, and herbs into the slow cooker pot. Season with salt and pepper. Stir.
3. Cook on high for 4 hours or on low for 7 hours.
4. Approximately 20 minutes before serving, take about half a cup of broth from the slow cooker, add it to the milk and flour to create a thickening sauce. Add this mixture back to the slow cooker and stir.
5. At the same time, add in the frozen veggies (peas or broccoli) so they don’t get too mushy from cooking too long.
6. Serve and enjoy! A squeeze of lemon on top is recommended.
